As the Executive Chef for the Bellevue Club I am constantly on the search for new local products to use in our kitchens. Rather than basing my decisions purely on price, I spend time looking for quality, freshness and proximity of the product.

In June, we switched from one dairy company to another. It costs a bit more, but we did it for our youngest members, who consume the lions’ share of milk. To make a decision, we did a blind taste test with three local dairies. Sounds easy enough, right? But when was the last time you did a milk tasting? Plus, our creative kitchen team has really strong opinions on what tastes good. When we do a taste test on a large item that will affect the entire Club and Hotel, we have everybody—chefs, restaurant managers and purchasing manager—participate.

Personally, I am not a milk drinker. My dear mother forced me to drink large quantities because, not surprisingly, I was a very tall child. Still, I never developed a milk taster’s palate.

BANANA BERRY SMOOTHIE
3 servings

2 sliced ripe bananas
2/3 cup frozen berries
1 cup vanilla frozen yogurt
1 cup orange juice

Place all ingredients in blender, Blend until smooth. You can add protein powder to this smoothie and I also utilize local bee pollen, which can help with allergies.

At the tastings, we started with non-fat and worked our way to the thicker stuff. When the dust settled, Sunshine Dairy came out on top. The taste was far superior and they use an opaque packaging that prevents UV rays from harming the milk in transit.

Another benefit of this particular dairy is that they work with local family farmers who employ natural methods. They source their fresh milk products from family-owned farms in Willamette Valley, Yakima Valley and Chehalis. These farmers have pledged to not inject their cows with artificial growth hormones and are also committed to not using antibiotics in their herds. This means that all the Club’s milk, yogurt, frozen yogurt, cream, sour cream, cream cheese, ice cream, butter and cottage cheese are hormone and antibiotic free. This was a huge factor for us.

So, when you are ordering a smoothie from Luna, the nonfat frozen yogurt is all-natural, the milk is all-natural, the juice in the smoothie is fresh-squeezed and non-pasteurized, and the frozen fruit is just fruit.

The milk isn’t the only thing that’s fresh around here. We’ve recently switched our eggs to Strieber’s Farms in Yelm, Wash. They are a family-owned farm with 70 employees (seven of them are actual family members). The hens are allowed to socialize and preen naturally. Housed in a community hen house, the flock roams and chooses where they would like to nest. They are also fed a 100 percent organic, vegetarian diet with high-quality grains. To ensure the integrity of their eggs, the family also owns a feed mill that supplies the grains and refrains from any antibiotic or hormone use.

So where does our juice come from? Again, a family owned farm with more than 80 years in the citrus business. Perricone controls every step of its juice production, from growing to extraction. And they create a freshly squeezed juice so pure that they don’t even need to pasteurize it. Although this product isn’t from Washington, we have tried to minimize our carbon footprint by choosing a California grower.

We currently offer their orange, grapefruit, tangerine, pomegranate, lemon and lime juice, as well as their lemonade.
